What you are stating is true many of these things can be done by the consumer if they should choose to. However many customers just don't want to period. They are willing to pay someone to setup their computer for them. One thing I tell all customers is that the computer is ready to be turned on by them but out the box it's not ready for real world usage. There are tons of manu. installed crap ( most not used so why have it). Many computers need several OS updates (especially with vista) People don't want to mess with the series of downloads necessary to make their new and I stress new computer work properly. I think it's swell that you can do this stuff yourself but don't pretend to tell the average joe he can also.
