Dolby Digital 5.1 is a sound format. It is the standard for DVD's. 6 channels (5 satellites and the low frequency) are compressed into a stream of data. A decoder extracts all of the sound and sends it to the correct channel.

Some DVD's have DTS, which is based on the same principle. The main difference is that it has a higher bit-rate.
