That looks like an excellent scanner, the only other brand I'd consider would be an Epson. If you can live with scanning from only one computer - or manually disconnecting and reconnecting it - go for it. It will be better than the scanner on the AIO except it won't have a sheet feeder. The CP2025 looks like a good printer.
Now - as far as color lasers go - before buying one, I'd recommend if possible, go to a store (Best Buy, Fry's, etc.) and see if you can get a demo. Lasers output more of a matte finish color than an inkjet. You need to see if the output is acceptable to your eye. Toners are quite costly, but they last a LOT longer than ink cartridges. You can also use cheaper paper in lasers.
Another option is another inkjet AIO. The HP Officejet 6310 is now down to 90 bucks. At that price, you can darn near toss the thing when the ink runs out (exaggerating somewhat). They seem to work okay and are reasonably reliable.
