1. The XB would be a good choice. Only possible downsides are a bit difficult to work inside of, less drive bays, and possible cooling issues. With the components I recommended, you shouldn't have any problems.
2. The PSU I recommended above is modular. No downsides these days except possible cost.
3. I didn't recommend a quad channel motherboard, and I won't in the foreseeable future. However, if you were to get one, it will run fine with only a pair, although with a minor performance degradation.
