Many ways. Change their password.... go to their workstation and add a rule to blind copy you-----then tell them their password needs to be changed.
From exchange the administrator can do all (unlike novell which had a bit of security) --- Can't really help you myself.... personal ethics reasons.
It is more than possible just like taping your corporate phone conservations ---- if your company has lots of money then ---- well you get the picture ---- if no money---don't worry.
