At 79C I don't think your computer would be able to function properly without major instability (freezine, lockups, rebooting, shutdowns) so I don't think that's right. The BIOS temps are normally more accurate than the ASUS Probe, but in this case that doesn't seem to be true. Don't know why you're seeing those temps.

I have the Asus a7nx8 motherboard. Also, in the BIOS it lists only one fan(CPU) as being activated. There's a listing for chassis fan but it has no data listed next to it in the BIOS. The manual also just lists the CPU fan. Are these other fans listed in BIOS necessary?

If you connect a fan that uses a 3 pin connector and has a RPM sensor in it to the motherboard CHASSIS FAN header, you'll see a reading in BIOS for that fan. If you don't have anything connected to that header, you won't get a reading. But it sounds like you have 2 fans on the back of the case, probably connected directly to the power supply so you're doing fine...you just won't get any RPM readings for those fans. No big deal.
