The more expensive editions are RETAIL versions. There is no operating differences in the OEM and Retail versions of the product.

The licensing differences are that the Retail version can be moved to a different computer (provided it is removed from the first computer also). The OEM version only allows for upgrade of the exisiting computer.

What people manage to do and what the licensing agreement is are two different matters. But that's the difference.
