Connecting to a friend without an intermediate server could be a little more difficult. If you are behind WinProxy and you're the one going *out* to establish the connection then you don't have to do anything else. Once you have connected, communication can go both ways over that connection.
If you are behind WinProxy and *waiting* for your friend to connect to you (in Internet parlance, that makes you the server) then you *do* need to do something first. Go to mapped ports, and map a incoming port from the WinProxy machine to your local machine. The proxy port and destination port will be the port(s) that the game uses, the destination IP will be the address of your client machine, and the connection type you will have to find out - probably at the same time you find out what ports it uses.
Again, once your friend connects to you, data can go over that connection in both directions.
So, make sure that your machine's Gateway (in TCP/IP properties) is set to the IP address of the server running the proxy software. Whether your setting is "transparent proxy" or NAT shouldn't make a difference. NAT will be more restrictive about what goes through to the client machine, but UT only requires one port to function, and the request is outgoing so it should work.

Connection Type/Protocol: UDP (if it asks you for this)
