EIDE (http://webopedia.com/TERM/E/EIDE.html)
SCSI (http://webopedia.com/TERM/S/SCSI.html)
RAID (http://webopedia.com/TERM/R/RAID.html)
SATA (http://webopedia.com/TERM/S/SATA.html)

You want a SATA or IDE(EIDE) drive. You can't use a SCSI drive unless you purchase a host adpater, and SCSI is far too expensive and complicated for what you'll be doing.

Go SATA for the new hard drive. That is the standard for hard drives right now. Nearly all opticals are still made for PATA, so keep them free of hard drives in order to connect your opticals there.
Maxtor and Western Digital are very good brands for hard drives.

CD-burner: LiteOn 52x32x52
DVD-ROM: Plextor PX-116A2
