I would like to know if there is a way to give each HD it's own activity light. I'm sure it's doable but I came up with nothing doing a quick google.

Yes, if the hard drive has an external header for a LED. It will look like a jumper block.

Then you can't. The only other way I've seen that is with a SCSI controller that has pins for each drive.

With some of the newer drives the jumper blocks are for mini molex connectors.
I would suggest that you look for the specifications of the drives from the manufacturer's website. Should have a jumper layout that you can use to identify the LED connector. And it may have the specifications of the connector that fits.
