If I am reading my MB specs right, my case fan can be controlled by the MB temp. What I can't seem to find is what type of fan to use. Does the MB actually need a speed sensor in the case fan (The bio seem to indicate it can report temp & fan speed.

After figuring out most of the system I seem stumped on a $5-$10 part. I haven't found details on fan selection on any of several forums. This is my first build so I would appreciate any suggestions for a 120mm, preferably a quiet one.

Many motherboards do read and control a case fan. You need a 3 wire fan(2 for power and 1 for RPM). Most people don't plug case fans into the mobo due to the low current that a mobo provides for fans(the CPU fan does need to plug into the mobo.
