Is there any kind of keystroke encryption software of anything similar to protect against things like keyloggers, etc? I can't seem to find anything of value.

The best way to protect from keyloggers is to have updated antivirus, anti-spyware, and make sure no one touches your computer. Check your keyboard cable.

We also have screen capture programs too - these were created after people got wise to and defended themselves against keyloggers. As shadowpr suggested keep that security up and use some common sense.
Don't forget a firewall. These days, nobody should be connecting to the Internet with broadband without a NAT device such as a router.
