I was impressed by this trick posted by GLC in another thread.
Run Winfile (yes, the old File Manager) and highlight a file, click on File, then Associate. Change the association to what you prefer.
Over the past 5 years, I have grown to really like Windows Explorer - but there are still some things that are more efficiently done with File Manager. It exists in NT also.

Another way to change associations is shift+right click on a file and then "Open with" then make sure the "always use this progam" is checked..
Charliey - Good point, but if you want to reassociate without actually opening the file (or *remove* an association - which is what I was addressing in the original post), File Manager is the easiest way. You remove an association in File Manager by changing the association to "none".
