I'm building one with a 2600+ with a 333 FSB and I'm using a Swiftech MCX462+ and a CCFL-wrapped 80mm fan because I'm going to overclock the living dog do-do out of it. Best you can do using air. As far as compounds go, I only use Arctic Silver III, regardless of what I put together. Right now, I'm playing with a K6/2 450mhz cranked to 550 and so far it's stable at 51C under load with a cheap stock aluminum HSF. Can't get that with the cheap stuff.

Volcano 9s are very good at maintaining the CPU cool. But they are noisy as a 747 taking off.

I have found the Speeze unit I mentioned to be a very effective HSF and though they only list it for a 2200, Given the performance of it on the last five builds, I think it would work fine on the 2800. It is very quiet and has an 80mm fan and very excellent workmanship. I would try it, and if your system ends up running a little hotter than you would like you could step up to a higher flow fan.
Given the fact that this HSF is 8 bucks plus shipping, even if you had to go to a higher capacity fan it would still be less than the Swift or Thermaltake.

Alpha Pal 8045 with the 80mm whisper fan if your mobo is one of the supported ones. My XP1600 is very cool and quite.
