Is it better to hvae 2 80 gb hard drives, or 1 120 gb hard drives? If neither is better, what are some of the advantages and disadvantages of each.

Well, the advantage to having two drives is that you can backup one drive to the other and visa versa. With one drive, you can't do that.
With two drives, things are a little warmer, but I'd rather have the security of two drives than to deal with a little bit of heat. Data backups can be a blessing when you need them ;)

Well it's probably going to cost more for two HDs, but as FF said, you do have the advantage of data backup to the second HD.
Also if you use Ghost or Drive Image, then you can keep an image on HD2. If the MBR, Partitions, or OS on HD1 gets hosed, then you can restore the image and be back up running in very little time.
In a way, it's comparable to RAID 1 because it is allowing you some redundancy.

With the 2 80 gigs you will have around 149 gigs total space with the 120 gig you'll only have around 111 gigs after formattimg.

Like all mechanical devices, two provides insurance against total loss.
