Hi, ive got PHP, and APACHE webserver installed and working, and now that ive been working on some sites, using text files to store and access data is getting pretty tiresome. I was wondering if anyone could tell me, or point me in the right direction to install MySQL, and any software useful / necessary to using MySQL.

What OS are you running Apache on?

Try going to http://www.mysql.com/ to download the right version of MySQL for your OS - there is documentation on the site too. I found the install very easy.
I also use a GUI for MySQL called MySQLFront - I think development of this application has ended though which is a pity. However there are plenty of other GUIs out there if you don't want to get down and dirty with command line.

If you want an easier way to do it. Go download foxserv and install it. It sets up everything for you, apache server, php, mysql, also gives you perl and python if you should need it.
PS. I was trying to do the same thing as you a while ago, but believe me this way is so much easier.
