There is a Linux server for it and there is a demo version for linux, but I don't know if the retail copy runs on linux.

Yes, it does. There's a linux installer included with the retail box version of the game, including a linux binary built with AMD64 optimizations.

That's amazing that it runs on Linux. Most of the time you just assume that it only runs on Windows.

I used to play UT03 on RedHat Linux, and now I play UT04 on SuSE. Haven't noticed any difference in performance or quality (positive or negative) from Windows.
