Point me in the right direction

My current computer that was built in 08/01 is coming up on 5 year old and is showing its age. I had though about upgrading (did a HD about a year ago), but once you get into the CPU, one thing leads to another and you have a computer that is 80% new. So I have decided to start from scratch. I have been out of the loop regarding PC hardware for some time now. Im sure things are much different than they were 5 years ago. I need some help so that I can start researching the right components. Money isn't the biggest concern, but I'd like to keep it under $2000. Looking to pick out a MoBo, CPU, and memory for now.

Here are some of the more demanding programs/tasks that I will be using on it...
Autocad
ProEngineer
Photoshop
Video/DVD Editing

Here are some things the computer WILL NEVER see at all...
Games

Do you have a preference for AMD or Intel? Both will work, just easier for us to spec something out.

Do you need a monitor, keyboard, mouse, speakers, Windows XP?

I will be running WinXP Pro. I have no preference between AMD or Intel. What CPU would you suggest for what I am doing with it (Cad, 3D design/modeling, and most important to me video/dvd editing)?

I will eventually need everything. I do have one thing in mind that is definitely not a must have, but rather somethingI have always wanted. I would really like to do a dual monitior display. So keep in mind when suggesting a video card that it may have support dual LCDs. If dual LCDs get too expensive I will just go with a ~20" wide screen LCD.

As far as everything else I am open to suggestions. Most important to me is that video/dvd editing run fast and flawless.

Please post your suggestions along with why you picked it.
