Just wondering if i should build with a AMD X2 or a Core 2 Duo

1. It depends on what you want. A custom computer means you make decisions as to what brands you'd like and performance.

2. The Intel Core 2 Duo is certainly a better performer than the AMD X2 line.

if you don't have a reason that you have to have one over the other, core 2 duo is the best right now

Core 2 duo e6400
Evga 7900 GS
Corsair XMS2 1gb (2 x 512mb)
WD 320 gb
Asus P5b deluxe
Rosewill 550 watt PSU

Your list looks good... only thing I'd change:

Rosewill PSUs are luck of the draw - only few are made by Channel Well. You are better off going with something from Antec, FSP, Sparkle, Seasonic, etc.
