Everything looks OK. Would suggest a few tweeks to the list. If your not going to OC, would go for Corsair Value Select DDR2 667 ram.
Not sure about Asus optical drives, we usually recommend Lite-On.

You didn't list a PSU, so need to think about that. The type of video card will determine the size needed. Look at the PSU sticky in the General forum for good PSU brands.

Three other things I should have probably put in the first post need to be added to the list:

Power supply:
Thermaltake toughpower W0103RU ATX12V / EPS12V 600W Power Supply 100

Cooler:
ARCTIC COOLING Freezer 7 Pro 92mm CPU Cooler (Not sure if I need this, however it might be handy)

Video card:
e-GeForce 8600 GTS (I already physically have this card).
Before I knew much about PSUs I tried to plug this into the internal PSU that came with the computer it used to be in (hope that did not damage the card). Have not tested the card since then (the old computer currently has a lock up problem that one computer expert said would necessitate sending it to Best Buy or somewhere else to be tested and worked on).

Going to check the PSU thread.

Changed the RAM to:
Corsair Value Select DDR2 667 ram

Changed the DVD drive to:
LITE-ON Black IDE DVD-ROM Drive Model LH-16D1P-187

Probably going to pass on over clocking this PC in the near future since it is the first time I have tried to build a computer for various parts (have some experience with changing parts out though).

That power supply is under the "Good" list, but this power supply is excellent quality, and is almost always recommended for the 8800's. Its also in the same price range, so you might as well get it. Watts arn't everything also.

CORSAIR CMPSU-520HX ATX12V v2.2 and EPS12V 2.91 520W Power Supply 100 - 240 V UL, CUL, CE, CB, FCC Class B, TUV, CCC, C-tick - Retail

I dont know if I would get a board with DDR2 and DDR3 slots like that. DDR3 is too new and too expensive. The Asus P5K or P5B is usually recommended.

Will those boards work with everything thing else I have listed? So far, it looks like they will. If so, I am going to switch to one of them. How big is the performance difference on the two boards? Both can hold 8GB of RAM which would seem like plently for my purposes.

Going to take your advice on the PSU.

if you arent planning to overclock the standard cooling should be fine, and if you install the artic freezer you will void your warranty
