Dual-head does mean that the video card has two outputs.

If you want three monitors, you will generally need two video cards. You can't "link" them as in SLI, since what SLI does is harness the power of two video cards to drive one monitor.

What is your budget?

If you get a single 30" LCD (There are some 26" LCDs that are fantastic as well) a dual card SLI/Crossfire set up will be necessary to get you the frame rates you'll need.

If you intend to game on a multi-monitor (3) set up then you can't do that but you will still need another video card.

Chose one or the other and we can advise you from there.
