Help with SATA connections on ASUS P7P55D mobo

I am getting ready to build a new computer for my daughter. The components are as follows:

PSU – Antec Earthwatts EA650, 650 W
CPU – Intel core i5-750 Lynnfield
Mobo – ASUS P7P55D LGA 1156
RAM – Corsair XMS3 4GB (2x2GB)
HDD – Western Digital Caviar Black WD7501AALS 750GB
Optical Drive – Lite-on Black SATA (two units)
Video Card – ASUS EAH4670/DI/1GD3/V2 Radeon HD 4670
All in one Card Reader – Rosewill RCR-IC001
OS – Windows 7 Home premium 64-bit

At the moment I am reading the motherboard user guide before assembly. I have several questions I hope someone can help with. The Mobo has 6 P55 Serial ATA connectors (7-pin SATA) and one JMicron JMB363 Serial ATA connector (7-pin SATA_E1) on board. From the information in the user guide, I believe the JMicron connector should be devoted to the HDD. Is this so?

Regarding the 6 other SATA connectors, in the important instructions section of item 4 under section 2.8.3 (Internal Connections) the guide states that "these connectors are set to Standard IDE mode mode by default. In Standard IDE mode, you can connect Serial ATA boot/data hard disk drives to these connectors. If you intend to create a Serial ATA RAID set using these connectors, set the Configure SATA as item in the BIOS to [RAID]." I do not want to setup a RAID configuration. What I want to so is connect the two optical drives to two of these connectors. Also, I have a Western Digital Raptor 74GB (from her previous computer) that I would like to temporarily connect to one of them for the purpose of transferring data files to the new HDD, after which I will remove it from the system. Does this mean that these will operate in IDE mode even though they are all SATA devices? In section 3.4.2 Storage Configuration, SATA Configuration is set to Enhanced (default) with Configure SATA as IDE (default) or Options [IDE], [RAID], or [AHCI]. What is AHCI Configuration? I have the impression that I should select option [AHCI] but I am not sure. I appreciate any help with this so that I can understand what I should do before I start the build.

1. I would not even enable the JMB controller unless you need IDE or eSATA. Use the Intel ICH connectors for your SATA hard drives and optical drives.

2. Set the ICH to AHCI.
