First HTPC/Media Server Build

I am looking to build a machine that will store all of my media and data. Initially I will probably use also use it as a HTPC, but it will probably turn into just a media server down the road. My main concern is having one place where I can safely and reliably store all my data. I was originally interested in the HP Mediasmart servers, but it seems like I could build something better for a comparable amount of money.

My budget is $500 to $600 for hardware only. I would like to build this machine so it is not outdated in the near future.

I am not really sure where to begin for components, so I will try to list all of my requirements if someone could give me some suggestions I would greatly appreciate it. I spent some time on newegg and got overwhelmed after a while.

Case: I do not need a dedicated HTPC case. I would actually prefer a regular size case for expansion purposes. Is it possible to get a cheap case that I could hot swap the hard drives like the media smart server? I would like to swap out hard drives for off site backups.

Processor: I was thinking an i3. Is this a good idea?

Motherboard: No idea here. Looking for audio and video through HDMI. See below.

RAM: I would guess DDR3, what is a good amount?

Video Card: I plan on connecting this machine to my Onkyo SR507 receiver via HDMI. I want video AND audio through HDMI. Can I do this with just a video card? Do I need a sound card? Is it possible to use just the motherboard? I may play Blue Ray discs on this machine in the future.

Hard Drives: I was thinking a smaller drive for OS and programs. A larger drive for media and data. Then two larger drives to back everything up. The two backup up drives would be swapped out periodically with one always being kept off site. Does this strategy make sense? If yes, please recommend some reliable drives.

DVD Burner: I will probably throw a cheap DVD burner in for now and add a BR drive later.

Remote Control: I have a Logitech Harmony 890 Remote. What would I need in order to use it with my HTPC?

Operating System: I plan on running Windows 7 64-bit, but this does not need to be factored into the price.
