Replace that Samsung drive with a WD Black SATA 6.0 drive and you should be good to go. You could save some money with no loss of quality or capability with a Corsair 650TX power supply.

Will replacing with the corsair psu still give me ample power for overclocking?

Certainly. A system with a HD 6950 only needs a 500 watt average quality PSU, and that's 650 high quality watts.

With the money you have left you might be able to upgrade to an i5-2500k and a sandy bridge mobo like a Asus P67 Pro.

I was thinking about it, but I'm sticking with AMD on this one. The 70ish left over will go to better cooling options such as Newegg.com - Thermaltake Frio Overclocking-Ready Intel Core i7 (six-core ready) & i5 Compatible Five 8mm Heatpipes Dual 120mm Fans Intel & AMD Universal CPU Cooler CLP0564 or Newegg.com - XIGMATEK Aegir SD128264 Mega Killer Double HDT 120mm Long Life Bearing CPU Cooler Dual Fan I7 i5 775 1155 1156 and AMD compatible assuming they'll fit in my case.
