Transfer files from old build to new build

I am about to embark on my 2nd build and I am wondering how I can move all the files/pics/music/vids/etc to my new PC? Old OS is Vista, new will be 7.

I imagine if I build a complete PC I can use something like the Belkin transfer cable to move files. But I would like to reuse my old case, power source, graphics cards and cooler so having 2 completed systems may be a problem.

What are my options here?

The least expensive thing to do (free) is put the old drive back in as an additional drive after you have Windows installed on the new drive. Then you can copy the files you need from the old drive to the new drive.

This sounds too simple. Will it work if new rig is 64 bit Windows 7 and old HD is 32 bit Vista, or does this not effect things?

Won't affect anything except possibly permissions. You may have to take ownership of the files and folders you need. NTFS is NTFS.
