P67 vs. Z68

Well, I've recently gotten into multimedia, as in videomaking and photography editing. From what I've heard, the Z68 allows for faster video encoding w/ use of onboard video. However, I will have a discrete GPU, so will this make a difference (6970).
Also, I plan on getting the next generation of Intel SSD's or a Vertex 3's. I heard that it has some sort of Smart-Cache system that benefits SSD's, so is that worth it as well?
If I should get the Z68, which board should I get considering my need for multimedia stuff.
I'm thinking this Gigabyte board, as it's recommended and I can Crossfire w/ it if I wanted to later down the road, or I could get the Asus P8Z68 Pro. Remember, I want a board for gaming and multimedia purposes :P I'll want multimedia ports like firewire.

Also, a board w/ Raid support would be cool, although I'll stress it's not necessary, as I'll need a ton of Hard Drives anyways (>:[).

Gigabyte Board:
Newegg.com - GIGABYTE GA-Z68XP-UD3 LGA 1155 Intel Z68 HDMI SATA 6Gb/s USB 3.0 ATX Intel Motherboard

The P67 is for your hard core gamer who does not need integrated graphics. Only a P67 board has two PCIe slots with 16x graphics lanes each.

The Z68 is for most everyone else.

So I've decided on a single GPU machine, but for movie making and stuff, would you say the z68 is best/will it make a difference?

I'm not really sure where to find this info, but what difference does the Z68 make with a larger SSD? I plan to have an 120-200Gb ssd in the future. I've heard it only really helps w/ smaller SSD's though.
Also, is it reputed as convenient? This is the deciding factor in my decision, as QuickSync/onboard video won't effect me.

In my opinion the Z68 chipset is the way to go. I found it to be a little more stable out of the box. It uses ssd caching and gives the user the ability to overclock the GPU when using just the integrated K series CPU. It was developed for the Enterprise customer in mind, giving them a viable, low cost upgrade path. However, like David said, the P67 is the fastest chipset and optimal for the gamer using a multi card configuration.

So if the P67 is the fastest chipset, does that mean there is literally a difference in how fast my CPU will run on either of them? If it's a noticeable difference, then I'm going w/ P67, since I'd like to get the most out of my CPU. The only real advantage is SSD caching, but I'll be getting a massive SSD regardless.
When it comes down to it, I'm going to order all the parts then get the Z68 if my budget allows it, if the difference in CPU speed isn't noticeable.

Also, is the normal form of the P8z68 the 'P8Z68-V'? Just a bit off since the P8P67 doesn't have the V.

If you want to game go with the P67 since they have now fixed all the bugs. It will still perform great with video editing and anything you can throw at it.
The Z68 allows for SSD Caching but the few I have built so far were buggy and had to contact MSI and Asus for bios updates!
