New rig...any advice?

I've decided after 5 years it's time to build a new computer, so I came back to the place that helped me figure it out last time haha! I've done some lurking around on here, the google, and them internets so I think everything should be compatible, but I'd like some other peoples input as well, just to be safe.

Case: Newegg.com - Antec Three Hundred Illusion Black Steel ATX Mid Tower Computer Case
CPU: Newegg.com - Intel Core i5-2500K Sandy Bridge 3.3GHz (3.7GHz Turbo Boost) LGA 1155 95W Quad-Core Desktop Processor Intel HD Graphics 3000 BX80623I52500K
Mobo: Newegg.com - Open Box: ASUS P8Z68-V PRO LGA 1155 Intel Z68 HDMI SATA 6Gb/s USB 3.0 ATX Intel Motherboard with UEFI BIOS
RAM: Newegg.com - CORSAIR Vengeance 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model CMZ8GX3M2A1600C9B
PSU: Newegg.com - Rosewill BRONZE Series RBR1000-M 1000W Continuous@40°C, 80Plus Bronze Certified,Modular Cable Design,ATX12V v2.3/ EPS12V,SLI Ready,CrossFire Ready,Active PFC"Compatible with Core i7, i5" Power Supply
HDD: Newegg.com - Recertified: Western Digital RE3 WD1002FBYS 1TB 7200 RPM 32MB Cache SATA 3.0Gb/s 3.5" Internal Hard Drive -Bare Drive
DVD Drive: Newegg.com - LITE-ON 24X DVD Writer 24X DVD+R 8X DVD+RW 12X DVD+R DL 24X DVD-R 6X DVD-RW 16X DVD-ROM 48X CD-R 32X CD-RW 48X CD-ROM Black SATA Model iHAS424-98 LightScribe Support
GFX: Newegg.com - ASUS ENGTX560 DCII OC/2DI/1GD5 GeForce GTX 560 (Fermi) 1GB 256-bit GDDR5 PCI Express 2.0 x16 HDCP Ready SLI Support Video Card

I'm building it with mostly gaming in mind, but my budget is around $1000. I'm planning on taking my first shot at overclocking with it (I've read it's pretty easy with the new motherboard chipsets that are out), and possibly setting up SLI later down the road. I thought about just going with a SSD, but I can't fit a big one into my budget and a small one just wouldn't cut it size-wise. I'll probably add a 40 or 60gig one after my next couple of paychecks. Anyway, any advice or suggestions will be greatly appreciated! Thanks!

I would not get the re-certified or open box hardware. You never know how it was treated by whoever opened the box.

Antec, Corsair and Seasonic PSU's are recommended here because of their consistent high quality.

No open box or re-certified

No Rosewill PS. Antec, Seasonic, Corsair (except builder series). 650W for single card and a certified SLI power supply for SLI GPU setup.

Hard drive is for servers. Western Digital Black or even a Hitachi SataIII 6gbs would be better.

If you are using stock overclock parameters, stock CPU cooler is fine. If you are doing advanced overclocking, you will want a different cooler and the low profile Vengeance ram.
