Do SATA drives have to be in a RAID configuration?

I am using an Asus K8V SE and would like to use 2 SATA drives with it. All of the drivers I have seen for this mobo seem to be RAID drivers. Is that the only way these can be run?

Nope. RAID is only an option. You can use it, but you don't have to.
The drivers you've seen are probably the correct drivers. They might be referred to as the RAID drivers because your SATA controller does RAID, too, but you don't have to use RAID.
