1 stick of RAM
I putting together a cheap system for my kids and was wondering if I can install 1 stick of 1GB ram now and add another in the future, or is it better to install a pair of 512's? Does it matter? Planning on running XP.

Your mobo choice supports Dual Channel and has 4 ram slots so you'll need to install the memory in pairs in order to take advantage of the DC capability. Get a 2x512 kit for now and you can add a second kit later.
