Need to store High Resolution Video in Real-Time

I'm planning to capture images from a 3.2 MPixel, 12bit, 30 Frames/sec camera that requires a data transfer rate (DTR) of 140MB/sec. However the capture board outputs either 8 bit or 16 bit that makes the DTR around 183 MB/sec. I need to store these data in the Hard Drive and at the same time would like to watch them on computer monitor in real-time. The volume of the Hard Drive is immaterial cause I'll be storing only a minute or two of moving images that would require around 22 GB only. What matters is the speed. I assume that I have to use 64bit PCI bus and 64bit capture card. I have no experience with RAID. It would be helpful for me if anyone could take the time to explain the whole system with block diagrams or at least could give me some ideas. Thanks in advance!
