The 921 is equipped with the GeForce 3Ti 500 (or an "ultra" version of the GeForce 3) while the 721 is equipped with the GeForce 3Ti 200 (which is more comparable to the original GeForce 3).
The 921 is equipped with a DVI-out plug for digital flat panel monitors. The 721 is not. The 921 has 64 MB DDR SDRAM with 500 MHz effective memory clock and 3.8 ns access time while the 721 has 64 MB DDR SDRAM with 400 MHz effective memory clock and 4.0 ns access time. (The 721 can likely be overclocked enought to make up the difference.) Those are the three main differences. One other difference is that the 721 comes with the game "Giants" optimized for the GeForce 3, while the 921 comes with "a game" optimized for the GeForce 3. They don't specify if it's Giants or not. They may be including a different game with the 921. Personally, unless I was running a Digital Flat Panel monitor, I would stick with the 721 and just overclock it a bit. You'll likely get the same performance from it as you can from the 921.
