How many Watts for Sli?

If I were to run 2 7800GT's in SLi, how many watts should I get for a PSU? I was thinking around 600W?

You need to get an SLI certified PSU. 600 Watts is most likely more than enough, but make sure it is certified.

The list of PSUs can be found Here

This is not true. There are Kilowatt PSUs out there, but that is much on the end of overkill. Like I said, you shoud only use SLI certified ones.

To verify, check other SLI rigs to see what PSU they used with the same two video cards.

Yep, that is the one I use with dual 6800s and will be the one I will use when I upgrade my cards. It also has some nice features like running for 2 minutes after you shut down the PC to remove any excess heat from the case and PSU.
