I am currently using Diskeeper for defragging. I am not too happy with it. My hard drive gets frgmented very quickly after running the utility. When I run it in "set it and forget it" mode, my PC slows way down. What utilities do you guys recommend for defrag?

O&O Defrag is the best. Diskkeeper is my second choice.

C:\WINDOWS\SYSTEM32\defrag.exe + scheduled tasks
Free and does the job, I havent manualy defraged in months and look how clean my HDD is (see attachement), dont see a reason to buy 3rd party software

You can change the priority in Diskeeper - it defaults to Normal, bump the set it and forget it priority down to Low. In 8.0 its in Action, change your settings.
