is there a program that where you speak and it types out what you say
and opens up programs and if so what are the names |

Dragon Naturally Speaking from ScanSoft is about as good a program as you can get for that. The newest version works really well as dictation software (after you train it and use it for a bit), and it can also be used to do several Windows functions. Comes with a headset microphone, but it is a bit expensive depending on where you purchase it.

Dragon is the one I use also- integrates well with all programs- works well in browsers, emails, etc., will allow for voice activation of most of the important functions in the MS Word toolbar
