I got Office Pro 2003, question:

Can I choose not to install some components of it, such as publisher?

It should have an advanced option for choosing to install custom components. When it gives you the choice of how to install, it should have a "Custom Install" option.

When you select Custom, you basically have to tell it NOT to install items.
