Restore function on proggies- how can they do that?

Okay, so Firefox 2 and Writer from OpenOffice.org both will restore your brower connection and work processing document if your computer gets shut down.

How can that be if the RAM clears itself upon rebooting? Surely they can't save it to the hard drive, can they?

Please add a little clarity to my life.
