Quality free incremental backup utility

Hello again everyone.

Just wondered if anyone can offer me some advise on free system backup utilities for Windows XP.

I am after something that can back up specified directories and just backs up changes that have taken place within those directories so that I can roll back to a specific date easily.

Would be nice if the software didn't use "special" file extensions so that I can still easily get to the backed up documents in the even that the utility suddenly stops being availalble for whatever reason.

Any advise much appreciated, it seems there are so many choices I don't know where to go.
