how does a server OS actually help make the computer a better server?

its not just the nos that makes it better, its also the server motherboard and drive controlers and nic's that make it better,
it will have features and software that a standard pc does not have.

The software is modified to handle data thruput rather than tweaked to handle numeric processing. It doesn't have to give graphics priority like general processors do. Although nothing will get ignored to the point it will get lost the items not involved with data transfer will wait longer for service.
