What O/S?
If XP, just go start > run > type "msconfig" and hit enter > "startup" tab Uncheck what you don't want. If 2000, you will have to install the msconfig file first: http://www.perfectdrivers.com/howto/msconfig.html

Any which are required (AV, any other program you want running) can be hidden by right clicking the taskbar>properties>customize> and selecting always hide. This only applies to XP (not sure about win2000).
