A service pack is a bunch of hotfixes and updates all rolled into one package to make it easier to deploy. These are vital to the security of your computer, and you definitely need to get SP2.

Periodically, MS groups all the previous updates from Windows Updates (both functional and security) into one large update and call it a Service Pack. Much easier to install a Service Pack than all the previously released individual updates.
