Windows Server 2008

I am looking for a piece of software I can install on a windows 2008 server. It is a 32bit hosted with Server Intellect. The software needs to be able to track who is logged into the machine and what they are doing during the time they are connect, including admin. I don't want anyone to be able to see it running in process either. Everything I have tried before gets scanned and shows a virus, I don't want a key logger per say but just checking up my people. Any one have any suggestions?

Look up auditing. It's built in, but I don't think it's enabled by default.
