Wikipedia has a pretty good description of the differences between the versions.
Windows 7 editions - Wikipedia, the free encyclopedia Most people building their own computer buy OEM 64 bit Home Premium. Edit: I forgot to mention, you cannot upgrade from 32 bit to 64 bit. You have to reinstall the OS and start from scratch if you don't already have it and want 64 bit. 64 bit allows your OS to utilize more than 4 gigs of RAM and allows your CPU to run as a 64 bit processor while running 64 bit applications.

Professional is the best version: it offers more customisation and control than Home Premium. Ultimate is a waste of money.

The main things to consider as to whether you should use Professional vs Home Premium are: Do you need to access a domain? Do you need MS XP Mode (separate download)?
If your answer is Yes to either of those questions then you need Professional. Most home users don't have a Domain server setup so don't need to access a domain. The functions of XP Mode (virtual machine running XP) can be duplicated using software such as VirtualBox, the main difference being that MS XP Mode includes a fully-licensed copy of XP while with VirtualBox you would need to provide your own copy of XP. I agree with Nuke that Ultimate is a waste, it includes Bit Locker software to encrypt your files. That capability can be provided by less expwensive 3rd party apps if it is needed.

Note also that, unlike Pro and Ultimate, Mom Premium doesn't have the Policy Editor, which is needed for some administrative tasks and is a life saver when removing some malware.
